Negroni # 115 – Iceman Slushie Machine

For a big family gathering in Loveladies on Long Beach Island N.J. I was struggling to devise a method for making frozen drinks, like frozen Margaritas or frozen Hugo spritzes. I had been crafting them in my Ninja Nutribullet blender but the quantity would never be enough.

I then went to my trusty AI and Amazon and got the lightbulb moment, In two days this amazing machine landed at my door Iceman by Chefman Slush-Ease MAX 90oz Slushie Machine, 64oz Liquid Capacity Frozen Drink Maker & Slushy Machine

This machine is truly transformative and a summer Negroni slushy will delight you and your guests.

Here is the recipe

I chose Natalie’s Blood Orange juice for its vibrant color and tart-sweet berry-citrus notes elevate a standard frozen Negroni well beyond typical brunch fare.

To make this work in a 64 oz compressor-style slush machine, you have to balance the sugar and alcohol content carefully. Too much alcohol or sugar won’t freeze (you’ll get a sad soup), and too little will freeze solid into a block and strain the motor.

This formulation is optimized specifically for a 64 oz hopper, balancing the classic equal-parts bitter backbone with the rich profile of blood orange and just enough water/sugar ratio to achieve a proper, scoopable slush consistency.

The Blood Orange Frozen Negroni Batch (64 oz Hopper)

Ingredients:

Gin: 12 oz (A bold, high-proof London Dry or a sturdy navy-strength gin around 45%–47% ABV works best to cut through the freeze).

Campari: 10 oz

Sweet Vermouth: 10 oz (e.g., Carpano Antica or Cocchi Torino)

Natalie’s Blood Orange Juice: 12 oz or other orange juice and freshly strained if there is any heavy pulp

Simple Syrup (1:1): 3 oz (Crucial for adding the extra sugar mass needed for proper freezing mechanics in a slush machine)

Water: 14 oz (Acts as the freezing medium so the machine can build its signature texture)

Total Volume: ~61 oz (Leaves a safe headspace margin below the max-fill line of a 64 oz machine).

Method:

Combine & Chill: Whisk all the ingredients together in a pitcher or just pour into the machine. For the best and fastest results, pop the mixture ingredients in the refrigerator for an hour beforehand so it starts cold.

Load the Machine: Pour the liquid directly into the hopper of your Iceman slushy machine.

Turn It On: Secure the lid and set the machine to its freezing/slush mode.

Wait & Serve: Depending on the ambient temperature of your room, it typically takes about 30 to 45 minutes to reach the ideal slush consistency. Dispense straight from the tap.

Garnish Idea:

Serve in a chilled rocks glass or small tumbler and garnish with a half-wheel of fresh blood orange or a dehydrated citrus crisp.
