Had the opportunity to really explore Center City/Uptown Charlotte on a Wednesday afternoon this week and chose to have dinner at Fin & Fino a “Social Seafood House” in the heart of Uptown. The perfect end of a wonderful afternoon stroll.
There I was thrilled to meet and converse, on one of my favorite topics booze, with Brittany “BK” Kellum, beverage director.
BK runs the cocktail program with a crew they call BK & The Clams, and they build the whole menu around a theme. Right now it’s Down the Rabbit Hole, an Alice in Wonderland menu. Past ones include a circus and a summer camp. The real move is the Call of the Clam. Skip the menu. Tell the bartender what spirit you like and which way you want to go, spirit-forward, citrusy, smoky, sweet, and they build you something that isn’t on any list. It comes with a little note telling you what’s in it.
I shared this blog with Brittany and gave here a challenge to create a unique Negroni for me, the only premises was a white base spirit.
What she made was so outstanding. I can still taste it over a day later.
